The Greystone Inn Appoints Chef Donnie Simmons as Executive Chef

As The Greystone Inn enters a new chapter under new leadership, the property is pleased to welcome Chef Donnie Simmons as Executive Chef. Simmons brings more than two decades of experience as a chef, restaurateur, mentor, advocate and hospitality leader, with a career rooted in Southern-inspired cuisine, regional ingredients and a people-first approach to hospitality. 

Born and raised in Charlotte, North Carolina, Simmons built his career from the ground up, learning every position in the kitchen before going on to lead acclaimed restaurants, develop culinary concepts and create award-winning menus throughout the Charlotte region. His work at DFC Monroe, Zada Jane’s, The Mandrake and other hospitality ventures helped establish dining destinations that became fixtures of the Charlotte culinary scene. 

A three-time Best Chef Charlotte recipient, Simmons has appeared on Food Network, competed in nationally recognized culinary competitions and earned recognition through the James Beard Foundation’s Blended Burger Project for his Grand Slam Burger. He also captured the 2016 Charlotte Heart Ball Chef Challenge Dessert Championship, among other culinary honors. 

Known for innovative Southern-inspired cuisine, Simmons blends technique, storytelling and a deep appreciation for regional ingredients and traditions. At The Greystone Inn, he leads the culinary program with a focus on exceptional guest experiences, team development, local partnerships and authentic hospitality, bringing a renewed culinary perspective to the historic lakeside retreat overlooking Lake Toxaway. 

Beyond his culinary accomplishments, Simmons is known for his commitment to mentorship and second chances. Through his Clean Kitchen philosophy and involvement with organizations focused on recovery and community support, he has used hospitality as a path for accountability, opportunity and purpose. His leadership at The Greystone reflects that belief: excellence is built by strong teams, meaningful relationships and a lasting commitment to taking care of people.
